DAY TWO

Here it is day two of my cleansing diet. It's been interesting so far. I managed to go to lunch with a good girlfriend of mine and it was a smashing success. We went to a local sushi place and I got the raw cabbage salad with ginger dressing and the awesome chef (do they call them chef's at sushi places?) made a special roll just for me. It had cucumber and seaweed as the 'wrapper' and avocado, carrot and cucumber for the inside. It was scrumptious.

I generally feel pretty good. This morning was a little rough, but once I got some food in my belly everything felt much better.

I'm looking forward to having sweet potatoes tonight, among other things.

I do have a question...about beets. Tell me what you do with beetroot. I've read about roasting and frying and boiling. But I want to know what you do with beetroot. One of the things I want to do is try new foods that I normally don't try. There aren't many veggies and fruits I haven't tried that are common around here, but there are definitely a few. Beetroot is the first lucky veggie!

beets! Yum. Cut off the tops, and then put them in foil, drizzle with olive oil and salt, and roast for awhile, maybe an hour? The skins should slip off when they are done, and you can slice them or quarter them, sprinkle on a little more olive oil, some salt, maybe throw some mint in, or some rice wine vinegar? Be careful though because they'll stain the heck out of everything they touch. They're also good cold (but cooked) with tomatoes.

I'm pretty sure I made a salad with beets once. Yup, just did a search for beets on my site and I made a salad with blue cheese and a tarragon plum vinaigrette.

Ooh here's mine!


4 Beetroot, cubed
1 carrot, grated
1 green apple, cubed
Tblsp Sunflower seeds (I use salted ones)
Squeeze fresh lemon juice
2 tsp olive oil
ground black pepper
Some Cherry tomatoes or grape tomatoes
I also add a squirt of Chili Pepper Paste!
Mix everything and chill! Great on hot days
